I sometimes kept track of things that are unfinished, depends on where they stalled. I am keeping trak of my only WIP because I'm too far in to it to just abandon it.

No writing today due to a health issue.

I dealt with life today, but I did get home early, so maybe some writing can still happen.

I keep track of all my unposted fic and stalled WIPs. For the most part, they are all going to be finished or made ready for posting at some point.
