It varies for me. Sometimes I'll stick to just one thing until it's done, that's usually reserved for chapter fic and *exchanges and at other times I'll switch between documents if I'm feeling stuck or just not feeling what I'm working on. *I pretty much stopped doing exchanges including pinch hitting because they were taking too much time away from my main fics.
