I tend to have several projects to work on but I tend to stick to one and swap over to something else if and when I need a change.

Several projects, though I do try to focus on one until something new distracts me.

A concept came to me in a dream last night, so now I'm getting it written down. Hadn't planned on writing today but the prose is flowing and who am I to argue?

Usually I just have one big, long project, but I'll take breaks to work on other occasional things as ideas come.
