Do you ever write different interpretations of the same character? This could mean anything from different backstories for the details not in canon to different motivations to different romantic/sexual partners.

I do, and I don't. There tend to be some things I view as intrinsic to the character and some things that vary from story to story. I like to think that the characters remain recognizably the same person and true to what we see in canon, but they're frequently shaped by different events.

I usually keep my interpretations basically the same, but I have gone the other way a few times when it fit the story I was writing. One or two of my characters are often seen one way by many in the fandom, while I interpret their characters a slightly different way, so I always have the option of writing them as others see them, as a variation. But I prefer not to do that, because then they aren't "my" characters. ;-)

For me, that often depends on pairing details. If you're trying to match characters who have little to no interaction in canon, it can take a fair bit of creativity to make it work, but it often means you have carte blanche on several points.
