Any special methods for organizing a fic? Outlines? Mind maps? The Snowflake Method?

I wrote 1500 words today, fleshing out the details. My beta encouraged me that the longer wip had hope to grow to 20 or even 25K. I hope I don't let her down.

I don't really organize. I tried outlines but the story always went out of my control. But snowflake method seems to be interesting.
